Fermented  Honey Garlic

Fermented honey garlic is made with 2 simple ingredients: raw honey and garlic. It creates a delicious garlic-infused honey that can be used both medicinally and as food.

To make this simple ferment, you just need a jar with a lid, some raw/unpasteurized honey, and fresh garlic.

To make the garlic easier to peel, chop off the root end and the tip. Then the papery peel will come off easily.

You can either put the cloves in whole, or chop them up - your choice!

Add your whole or chopped garlic to the jar, only filling it about half way.

Pour your raw honey over the garlic, ensuring it is completely covered.

Close the lid, and tip your jar upside down for a minute, ensuring that all your garlic is coated in honey.

Once a day for a week, tip the honey upside down again, then open the lid briefly to "burp" the ferment (let the gasses escape)

For the next 2-3 weeks, tip and burp 2-3 times per week. Then store in a cool, dark cupboard.  Use it medicinally, or as a salad dressing or marinade!
