Ball Complete Book of Home Preserving
My canning bible. I pull this out every time I'm going to can something.

Presto 23-Quart Induction Compatible Pressure Canner
My current pressure canner. I use it for canning anything non-acidic, such as meat, potatoes, vegetables, soups, stews, etc.
A great, budget-friendly canner.

All American 1930: 25qt Pressure Cooker/Canner
I don't yet have this pressure canner, but it's on my wish list! It's definitely a 'lifetime' canner - it's very heavy duty, and could likely be passed to your children's children.

I love using reusable lids for canning. I mostly use wide mouth.

I do use some regular mouth canning jars, so I keep some Tattler regular mouth lids on hand also.

Wide Mouth Funnel for Mason Jars
A wide-mouth funnel is indespensible when it comes to canning. Most starter canning kits include a plastic funnel, but I don't like pouring hot food through plastic, so I invested in a stainless steel one.

When it comes to canning jars, you don't want to cheap out. Not only do they contain the precious food you worked so hard to preserve, but they will be exposed to extreme heat changes when canning.
For that reason, I only use and recommend good name brand mason jars, like Ball (or Bernardin in Canada, which is the same company).
I typically only buy wide mouth canning jars, because they are easier to get the food in and out of, are easier to clean, and can even go in the freezer, since there is no shoulder to break if the contents expand.

Canning Jar Lifter
When canning, you need to remove extremely hot jars from an extremely hot canner.
The only way to do this, is using a jar lifter. The part that lifts the jars out is made of rubber, which grips the jar so you can lift it out safely.
I don't own this exact brand, but they are all pretty similar.
Whatever one you choose, just make sure it's metal and looks well-made. You need these to be sturdy.

Impresa Products 2-Pack Pressure Canner Rack
Canning racks are great, because if your canner is large enough, they allow you to double-stack pints or half pints, so you can can twice as much product in one canning load.
I try to never run a canner that isn't full.

Norpro Magnetic Lid Wand
If you use metal canning lids, a magnetic wand makes it much easier to lift your lids out of the hot water before placing on your jars.
(The metal lids like to stick together, especially once they're wet).
Fermentation
The nice thing about fermenting, is you don't need anything fancy or expensive to get started.
I started off using a small glass jar filled with water as a weight, and a cloth napkin instead of a fermentation lid. I did this for years before investing in fermentation equipment.
I did find that I struggled a little with getting mold on my ferments, and the glass jar in a jar trick didn't always keep all my food submerged. Switching to glass weights and fermentation lids gave me improved results with my fermentation.
